Aloo Gobi recipe is a floret of Cauliflower & Potatoes nicely blended with Indian spices curry. These spices can be found in the local grocery stores. Aloo Gobi curry is a little hot and infused with the flavors of ginger & "meat masala". The word ‘Sabji’ simply means curry.
Meaning- Aloo (Potato) & Gobi (Cauliflower). This is a quick delicious recipe that is extremely popular.

Yield – 3 servings
Timing – 20 minutes
Prep time – 10 minutes
Total- 30 min
Ingredients:
Oil- 5 tbsp
Cumin seed- ½ tsp
Garlic- 1 clove, finely chopped
Ginger- 1 tsp, finely chopped
Onion- 1 small, finely chopped
Green Chili- 2 nos, finely chopped
Tomatoes- 1 small, chopped
Cauliflower- 300 gm, 5cm florets
Potatoes- 2 nos, diced
Salt to taste
Red chili powder- 1 tsp
Turmeric powder- ½ tsp
Meat masala powder- 1 tsp
Coriander powder- 1 tsp
Black pepper powder- 1/3 tsp
Cream- 3 tbsp
Garam masala powder- 1/3 tsp
Coriander leaves for garnishing
Method-
Heat the pan, add oil and for tempering add cumin seeds. After splutter, add chopped onion, green chili, garlic, and ginger. Sauté it till it turns translucent. Further, add potatoes and cauliflower. Sauté it for the next 5 minutes.
Now add tomatoes, mix well. Once the tomatoes are soft add dry spices like- turmeric powder, red chili powder, meat masala powder, grounded black pepper and garam masala. Sauté it for a minute. Further add fresh cream and cook until it starts releasing oil.
Then, add water to make gravy. Cover the lid of the cooker or if you are using a pan to cook then cover it with a lid. After 1 whistle, turn off the gas flame. Or in a pan bring it to boil once.
Let the cooker cool down itself, then open the lid.
Finish it with chopped coriander leaves. Now, the tasty Aloo Gobi Curry is ready to be served with Roti or Rice.
Note- Before opening the lid of pressure cooker, let it cool down completely by itself or release pressure by raising the whistle, otherwise the pressure cooker has pressurized vapor, hence it can be injurious. Be careful.
Storage- You can store it in the refrigerator for the next 3-4 days. Heat it before serving, it tastes good when it heats up.
