This crunchy roll features potato tempura filling and a crispy topping of breadcrumbs. The flavor & texture are out of this world! I usually pair them with evening tea and a choice of ketchup. These are my all-time favorite tiffin snacks. What are you eating this evening?

Let's jump to the recipe,
Yield – 7 pcs
Timing – 30 minutes
Prep time – 20 minutes
Total- 50 min to 1 hr.
Ingredients:
Bread slice- 7 pcs.
Egg wash- 1 no., beaten
Olive Oil- 2 tbsp
Green chili- 2 nos., finely chopped
Onion- 1 small, finely chopped
Potato- 4 medium, boiled & mashed
Red chili powder- 1/3 tsp
Turmeric powder- 1/3 tsp
Salt to taste
Cumin powder- 1/3 tsp, roasted
Black pepper powder- 1/3 tsp
Cilantro leaves- 1 tbsp, fresh & chopped
Breadcrumbs for dust
Method-
Heat the pan, add oil and then chopped green chili. Stir it for 5 sec. Add the chopped onion and fry until lightly golden brown. Then add the mashed potatoes and mix for 5 minutes.
Now, add dry spices like turmeric powder, red chili powder, cumin powder, black pepper powder & salt to taste. Then add chopped cilantro leaves, mix quickly. Now the mixture is ready for use. Set it aside for a while.
Then take a slice of bread and cut the edges. Now, place a bowl full of enough water. Dip these slices of bread one by one in the water and immediately squeeze it with light hands (use your palm). Otherwise, its chances to breakdown.
Now, take 1 tbsp of mixture in your hand and form a cylindrical shape about 3 inches long. Then, dust with breadcrumbs.
Preheat the oven for at least 5 minutes. Place this prepared cylindrical roll in a squeezed bread and seal it all over sides. Now, arrange it on a parchment paper tray. Repeat these steps until you're done. Finally, eggwash the bread rolls. And immediately placed in the oven for baking. Set oven to 170℃ (338°F) for 25-30 minutes on the baking setting until it looks golden in color.
Serve hot with tomato ketchup or green chutney.
Note- Don’t dip the bread slice in water for too long as it’ll breakdown easily. Chili can be eliminated. These rolls are crispy, delicious and if you serve it with jam/ jelly then the best part is kids will love them.
Tips- Instead of eggwash it can use melted butter or oil to brush.
