This is probably the healthiest & quick delicious recipe, which in a modest accompaniment brings out the richness of lentils with the goodness of spinach and garlic spices. This is a protein-rich instant pot meal, simply known as "Spinach Dal" or "Dal Palak". And also ‘lentil spinach soup’. Each house has its own recipe for cooking it. You can use any lentils to make this super tasty dish.
Spinach is called ‘Palak’ in Hindi, and lentils are ‘Dal’. I served it along with Plain white rice.

Here is how to make Dal Palak in home style. However, the recipe itself is a wholesome meal. So, you can make it at any time.

Total- 30 min
Ingredients:
Spinach – 50 gm
Red lentil- 1/4 cups
Chickpea lentils- 1/4 cups
Turmeric powder- 1/3 tsp
Salt to taste
Water as required
Tempering:
Oil- 3-4 tbsp
Dry red chili- 1-2 nos., optional
Mustard seeds- 1/3 tsp
Cumin seeds- 1/3 tsp
Asafoetida- a pinch
Garlic- 2 cloves, chopped
Green chili- 1-2 nos., chopped
Onion- 1 small, chopped
Tomato- 1 small, chopped
Salt if required
Turmeric powder- 1/3 tsp
Red chili powder- 1/3 tsp
Coriander powder- ½ tsp
Garam masala- ½ tsp
Ghee- 2-3 tsp
Method-
First rinse the lentils. Then, pressure cook the lentil with spinach (fresh & frozen). Add sufficient water, turmeric powder & salt as per your taste and cook for 10 to 12 minutes or cook until 1 whistle.
Heat the oil in a frying pan. Fry red dry chili, mustard seeds, cumin seeds & when seeds sizzle, immediately add chopped garlic and asafoetida, sauté for a few seconds. Skip asafoetida if you don’t have one.
Add chopped green chili, onion, tomatoes, and sauté it until pulpy. Then, add the powder spices, mix well. Stir till the spices start separating oil. At this time add cooked lentils. Mix everything together. If needed, add water of perfect consistency. Finally, add ghee to enhance the taste.
Let it boil nicely once. Pair it with bread or flatbread or simple rice. Enjoy😊
Note- It can be used with any lentil. And chili can be adjusted as per your taste. Chickpea lentils take longer to cook, so cook until mushy.
Storage- Lentils are very delicate to store due to their protein content. So, consume it as soon as possible (ASAP), store up to 2 days longer if needed.
