Today’s menu is Egg Fried Rice…
Fried rice can be cooked anytime without any special occasion. Especially, it tastes better than steamed rice. Egg fried rice can be prepared with many types of methods and even with several types of ingredients such as eggs, vegetables, meat, or seafood. Depending on the situation and person, we can make this type of rice for breakfast, lunch, dinner or just for snacks, and we can prepare it for kids with very less concentration of spicy ingredients. I have mentioned some list of ingredients in my video which I used in my cooking today, but you can also use various types of different vegetables available as per your choice of taste.

Yield – 2 servings

Ingredients:
Rice – 2 cups, cooked
Olive Oil – 3 tbsp (tablespoon)
Cumin seeds – ½ tsp (teaspoon)
Green chili – 2-3 nos., chopped
Eggs – 2 nos., scrambled
Onion – 1 large, chopped
Cauliflower – 1 cup, chopped
Green Peas - ½ cup, frozen or fresh
Tomatoes – 1 medium size, chopped
Turmeric powder – 1 tsp
Red chili powder – 1 tsp
Salt to taste
Coriander leaves for garnishing
First cook scrambled egg
Ingredients for scrambled eggs:
Olive Oil– 1 tbsp
Eggs – 2-3 nos.
Turmeric powder– 1/3 tsp
Red chili powder - 1/3 tsp
Salt to taste
Method:
Step 1- Scrambled Egg
In a heated wok or pan, add oil, and then crack the eggs, mix immediately. Add turmeric powder, red chili powder and salt to taste, stir it and keep it aside or take out in another bowl. Or you can use the same pan for fried rice.
Step 2- Fried Rice
Place a wok or pan, add oil and then cumin seeds in a heated oil. Add chopped onion, green chili, sauté it quickly. You can increase or decrease the number of green chilies according to your taste. I like chili flavor so, I used more red chili powder and green chili.
When the onion turns translucent, add chopped cauliflower, and give it a good mix. After the cauliflower starts turning brown add peas, sauté it for the next 2-3 minutes. Add turmeric powder, red chili powder and salt as per your taste. Add cooked rice, mix it well.
Lastly, add scrambled eggs in it, quickly stir, and serve hot, garnishing some coriander leaves (coriander leaves are completely optional). It is often eaten by itself or asor an accompaniment to another dish. Enjoy!
Note- Instead of veggies, add fried chicken to it.
