Focaccia dipped in olive oil or to serve in soy sauce is delicious. Focaccia is a flat leavened oven-baked Italian bread. In some places it’s called “PIZZA BIANCA”. It can be served as a side dish or as a great alternative to a classic Pizza. There is nothing like the aroma of freshly baked bread. Homemade Focaccia is crispy, chewy crust, fluffy and amazing garlic, rosemary topping give it a nice flavor.

Yield – 9 pcs
Timing – 20 minutes
Prep time – 1 hr 15 minutes
Total- 1 hr 35 min
Ingredients:
Flour- 2 cups
Semolina- ¼ cup
Instant Yeast- 1 tsp
Salt- 1/3 tsp
Olive oil- 2 tbsp
Lukewarm water 1 cup + 1 tsp sugar
water required for kneading
Toppings ingredients:
Garlic- 2 cloves, chopped
Olive oil- 2 tbsp + water
Rosemary- 1 tsp
Dry tomatoes- 2-3pcs chopped
Chili flakes- ½ tsp
Capperi- 1 tbsp
Sea salt- a pinch
Method-
Placed a large mixing bowl. Add all-purpose flour, semolina, salt, instant yeast, and olive oil. Now, add 1 tsp of sugar in lukewarm water, mix well. Pour a mixture of water and sugar into the flour. Mix everything manually. If required add more water to knead the loose dough. Knead for 10 minutes until smooth and elastic. Cover the dough and keep it to rise in a warm place for 45 minutes.
Now, grease the baking tray. Place the baking paper in it. Shift the dough in baking tray. Spread the dough well in a baking tray. Cover the dough again and let it rest for 30 minutes.
Meanwhile, preheat the oven to 180℃ for at least 5 minutes.
Further, dip your fingers into water and just start making recesses in the dough. Sprinkle the dough with chopped garlic, olive oil, rosemary, sun-dried tomatoes, chili flakes, capperi and some sea salt (additions can be added at your discretion). Lastly, drizzle with water and immediately put it into the preheated oven and bake for 13-15 minutes until golden brown. Serve the focaccia with olive oil or soy sauce / cheese paste / hummus.
Note- You can add rosemary, thyme, or oregano (whatever). Knead the dough too soft. A warm place is particularly important for the dough to rise, and the yeast must be proofing well.
Storage- Focaccia can be stored in an airtight container for up to 3-4 days.
