Garlic Laccha Paratha

Laccha Paratha is just like other paratha variants but with extra flaky and buttery layers in an aromatic flavor. Here I smeared it with garlic seasoning. The secret of making perfect garlic laccha parathas is rolling them properly. In Hindi Laccha means “layers”.

It is a unique Indian flatbread with visible multiple layers even when cooked. The Laccha Garlic Paratha is also known as “Malabar Parathas”.


Garlic is always unique and has a pungent smell and lends a different flavor to all recipes. When mixed with the ingredients of parathas and made aromatic, it will make a great recipe. I added chili flakes for spiciness, but if you don't like spicy you can avoid it.

Crispy Parathas paired up with a lip-smacking curry is the perfect combo to enjoy your meal.

Yield – 6 pcs.

Timing – 25 minutes

Prep time – 15 minutes

Total- 25 min



Ingredients for dough:

All-purpose flour- 2 cups

Salt to taste

Olive oil- 2 tbsp


Toppings:

Olive oil- 2-3 tbsp

Sesame seeds- 1 tbsp

Chili flake- 1 tsp

Garlic- 1 clove, large, chopped

Salt- ¼ tsp

Coriander leaves- 1 tbsp


Method-

Preparation of dough

In a large bowl, add all-purpose flour, salt to taste and drops of oil. Mix well. Knead well for about 5 minutes, then cover with a cloth and let stand for 10 minutes.


Preparation of Parathas

Place a bowl and add olive oil, sesame seeds, chili flakes, chopped garlic, and chopped coriander leaves. Mix this paste.

Now, pinch a ball size portion from the dough, roll it out and flatten it and sprinkle a little dry flour.

Moreover, roll it up to make a paratha with a round shape about 10 cm in diameter.


Then, brush with prepared seasoning and sprinkle with flour. Which helps in the formation of the flaky layers of paratha. Now, start creating pleats by folding, which is clearly seen in videos. Roll it prepared pleats like a Swiss roll. At last, stick the end by pressing gently on the other side.


Further, dust these prepared swiss roll with dry flour and start to roll it (roll slightly thick).


Then, heat the griddle and place the rolled parathas. Roast the Parathas on medium flame. After 15-20 seconds later flip off and cook to the other side. Grease with oil on both sides. Flip and roast both sides nicely.


Finally, serve the Garlic Laccha Parathas hot with your choice of curry or pickles or yogurt.

Note- You can add dry garlic powder as well.

Storage- store in an airtight container for 4-5 days in a refrigerator.
