Idli is a fluffy, soft & spongy steamed savoury pancake. It can be paired with Coconut chutney and Sambar.
This recipe is mould free. So, you can prepare in any cake mould or shape you want.

Let's jump to the recipe,
Yield – 3 servings
Timing – 40 minutes
Prep time – 10 minutes
Total- 50 min
Ingredients:
Rice Flour- 2 cups
Semolina- ½ cup
Salt- ½ tsp
Yogurt- 1 cup
Water as required
Baking Soda- ¼ tsp
Method-
In a large bowl, add rice flour, semolina & yogurt. Mix all together and rest it for 10 minutes. Before steaming add baking soda and salt as per your taste. Mix well. Immediately, pour into the oil greased bowl or idli moulds.
Further, put it in a preheated oven for 40 minutes in 180 ℃ (356 °F). Also put warm or hot water inside the baking tray to give the steam effect. After 40 minutes, takeout the prepared idli and cool it down for a minute, then scrap the edges, place it on another plate, and cut it into desired shape and size.
As it is a breakfast recipe, you can pair it with Coconut chutney and Sambar for a fulfilling meal.
Note- This batter can be used to make Dosa & Uttappam. Serve it with coconut chutney.
Storage- It can be stored in a refrigerator for 2-3 days.
