Kanda Poha

My recipe of Kanda Poha is made up of Flattened rice, onions, and some mixed seasonings all together, just as I love it. It’s not the authentic one, but it’s ultimately my version. This recipe is popular in Maharashtra, India. You can cook it at morning breakfast or in the evening snacks. It has a great combination of crunchy and softness with aroma of curry leaves, completely incredible.


Poha can be served as it is, but it gets more flavor when it is topped with fresh grated coconut or just sprinkled crunchy mixture.


To know the meaning of this recipe, so here it is-

Poha called in Marathi language, one of the regional languages of India. And in Hindi it’s called ‘Chura’. Similarly, Kanda means Onion in English, in Marathi language is 'Kanda' & in Hindi it's 'Pyaz'.

Yield – 2 servings

Timing – 15 min

Prep time – 15 min

Total- 30 min


Ingredients:

Flattened Rice/ flake rice – 1.5 cups

Onion – 1 large, chopped

Green chili – 2-3 nos. chopped

Peanut – 3 tbsp, roasted

Green Peas – 3 tbsp, (frozen or fresh)

Tomatoes – 1 tbsp

Lemon juice – 1 tsp

Oil – 3 tbsp

Mustard seeds – ½ tsp

Cumin seeds – ¼ tsp

Curry leaves – 6-10 leaves

Turmeric powder – 1/3 tsp

Red chili powder – ½ tsp

Black pepper powder – 1/3 tsp, optional

Salt to taste

Coriander leaves – handful chopped, for garnishing


Method-

Rinse the flattened rice, as we don’t need to soak the flattened rice, only rinse it well.

Heat a pan, then add oil to it. Add mustard seeds, cumin seeds, let the seeds crack then add curry leaves and green chili. Here you can use any mild chili or it’s up to you to not add it.


Add chopped onions and sauté it nicely. Add peanut and tomatoes, mix well for couple of minutes, then add washed flattened rice and again give it a nice mix.


Add turmeric powder, red chili powder, black pepper powder and salt as per your taste, mix it for the next 4 to 5 minutes. At the end you can add lemon juice, so it gives a little sour taste but if you do not like it then avoid adding it. Finish garnish with coriander leaves. Serve hot!


Tips- Don’t soak the Flattened rice or rinse it longer. Wash it quickly or else it decomposes its shape.

Note- Completely optional to add green chili, red chili powder. If you don’t have some of the above ingredients, then also you can cook this delicious recipe with basic ingredients like- Flattened rice, mustard or cumin seeds, onions, green peas or peanuts and the dry powder ingredients.


I used roasted peanuts here, but you can use any, again it’s up to you.

If you are using raw peanuts, then before adding them, roast it. It will give a crunchy taste to Poha (flattened rice).
