Litti- Sattu ka Paratha

Litti is commonly known as Sattu ka paratha. It’s a kind of stuffed flatbread. This delicacy is super healthy and delicious. It is popular in Bihar, India. It is usually made with roasted chickpeas, the brown one and is high on fibre and protein. Especially, Litti along with chokha is famous menu in eastern part of India. Chokha is a side dish made using smoked eggplant and tomatoes mashed.

You can have it for breakfast or lunch.

Yield – 2 servings

Timing – 25 min

Prep time – 10 min

Total- 35 min


Ingredients:

Sattu/ Roasted gram flour or Roasted chickpeas flour – 1 cup, 250gm

Mustard oil – 1 tbsp

Ginger – 2 tsp, finely chopped

Garlic – 1 tsp, finely chopped

Green chili – 3-4 nos., chopped

Coriander leaves – handful chopped

Carom seeds – ½ tsp

Red chili powder – 1/3 tsp

Black pepper grounded – ½ tsp

Pickle – 1 tsp, masala

Salt to taste

Water – 2-3 tbsp


Method-

In a mixing bowl, bring all the ingredients together, and prepare a nice stuffing mixture. If the mixture is super dry, sprinkle some water and keep aside.


Bring another bowl and measure universal flour and knead into a soft dough. A nicely kneaded soft dough leads to softening Parathas. Cover it with lid and keep aside for minimum 10 minutes.


Make a lemon size ball from the dough and roll each ball a little in a diameter of 5-6 cm and 5 mm thickness. Place 2 tbsp of filling/stuffing in the middle of it, stick it from all sides and sprinkle some dry flour on the surface where you planned to roll it. With the help of rolling pin, again roll it about 10-12 cm diameter and 5 mm thickness.


Heat a griddle and place the paratha. Cook each side of paratha until it turns golden brown, add a few drops of Olive oil/ vegetable oil/ Ghee as per your choice while cooking. Repeat the process for the rest of parathas.


Now, the Sattu ka Paratha/ Litti is ready to be served. To pair it with curd/ yogurt/ pickle or Baingan ka bharta/ chokha.


Note- While rolling the parathas, give a light pressure with hands. And dough should be super soft, else its breakdown easily and stuff comes out. 

Store- It can be stored for up to 2-3 days in a refrigerator.
