Masala Idli made out with leftover or the fresh one Idli. Masala Idli is always an option for some spice in simple Idli . So, I made an easy solution to it. I cooked a delicious and healthy breakfast or evening snacks recipe with Idlis or Fried masala Idli.
Basically, Idli is a savory rice cake, originating from south India. The cakes are made by steaming a batter consisting of fermented black lentils called Urad and rice.
Now, there are lot of recipes for making instant Idli with semolina too. It can be paired with Coconut chutney, Sambar. But believe me, you can eat without any side dish.

Super quick and tastier snacks ever.
Yield – 1 serving
Timing – 20 min
Prep time – 15 min
Total- 35 min
Ingredients:
Idli- Approx. 5 pcs, cut into small pieces
Oil- 4 tbsp
Mustard seeds- ½ tsp
Dry curry leaves- 7-8
Onion- 1 medium, finely chopped
Green Chili- 2 nos., finely chopped
Salt to taste
Tomato- 1 large, finely chopped
Turmeric powder- ¼ tsp
Red chili powder- 1 tsp
Pav bhaji masala- 1 tsp
Spring onion- handful, finely chopped
Fresh coriander leaves- handful, finely chopped
Slice of lemon juice- 1 tbsp
Water- ¼ cup
Method:
Heat oil in a non-stick pan or wok. Add mustard seeds and let them splutter, add dry curry leaves, if you have fresh one, then you can use that fresh leave. I have dry leaves so I am using it. Add onion, green chili, and sauté till golden brown. Add salt to taste, again sauté it for a while. Add tomato and sauté till soft and pulpy. Add turmeric powder, red chili powder and mix well. Then, add Pav bhaji masala to enhance the taste, stir it properly. Add ¼ cup of water, mix and cook for next 1 minutes.
Add spring onion greens and coriander leaves and give it a good mix.
Further, add small pieces of Idli and mix well. Lastly, add a few drops of lemon juice to it. Sauté it for a minute and serve hot garnished with coriander leaves!
Note - this is leftover Idli masala, so better finish it soon.
Store- Store it in a refrigerator for the next 2 days. It’s a breakfast recipe and a snack. It can be cooked with leftover Idli too.
