Mini Raspberry Cheesecake- (no-bake cake)

Don't worry! Here, this recipe comes with no-baking. This quick recipe is super tasty and aromatic. It looks fantastic if you're serving at your home party. Everybody likes this creamy, juicy, and not too sweet dessert. You can prepare it for any occasion.

Let’s jump to the recipe,


Yield – 2 servings

Timing – 5-6 hrs.

Prep time – 15 min

Total time- 6 hrs. 15 min



Ingredients:

Biscuit- 5 pcs., sweet & crushed

Butter- 1 tbsp, melted & unsalted

Raspberry jam- 3 tsp

Sour cream- 1 tbsp

Whipped cream- 3 tbsp

Cream Cheese- 2 tbsp

Sugar- 2-3 tsp

Lemon zest- 1/2 tsp

Lemon juice- 1/4 tsp

Gelatin- 1/2 tsp

Hot water- 3 tbsp


Method-

Place a mixing bowl. Add crushed biscuits and pour melted butter, mix everything together. As a base, set this prepared biscuit in a mould. Keep it in the refrigerator for 10 minutes.


Then, spread the jam over the base. Now, in a mixing bowl. Add cream cheese, sour cream, and whipped cream, mix well. Add a little amount of sugar, mix well. Add lemon zest and a few drops of lemon juice, quickly mix it.


Meanwhile, prepare gelatin liquid.

Take a small mixing bowl. Add 1/2 tsp of gelatin in 2 tbsp of warm water, stir it quickly. Set aside for 2-3 minutes.


Further, spread this prepared cheese cream all over the jam. Finally, keep it in refrigerator for 5-6 hours or for best result, leave it for overnight.


Remove cheesecake from mold-

Wet the cloth in hot water, squeeze the water. Take out the mould by warm cloth circulating to the sides of the wall. Serve it cold !


Note- You can prepare this dessert with a mango or any berry flavor.
If you don't have sour cream, use yogurt. 

Storage- It can be stored in the refrigerator for up to 3 days.
