This is the best recipe for energy cookies! Everyone needs a classic oat & nutty cookie recipe in their repertoire, and this is my version. I have been making them for many, many years and it always comes out world delicious Energy Cookies!
It has only two basic ingredients, no sugar, no flour and requires no chilling time. So simply, uncomplicated, incredibly delicious, doughy. These cookies are crunchy, chewy, cakey but fully baked. Perfectly nutty and sweet cookies.

Yield – 250gm
Timing – 12 min
Prep time – 20 min
Total time- 32 min
Ingredients:
Nuts- 250 gm
Fig- 50 gm
Chia seeds- 1 tbsp, soaked
Oats- 2 cups
Honey- 2 tbsp
Butter- 1 tbsp, melted
Mixed Nuts-
Hazelnut- 45 gm
Almond- 50 gm
Walnut- 35 gm
Cashew nut- 25 gm
Raisins- 75 gm
Brazil nuts- 20 gm
Method-
Preheat the oven to 338 °F (170 ℃). Line baking tray with parchment paper and set aside.
Placed the food processor. Add nuts and figs. Turn it on, scrapper the sides time to time. Approximately, it takes 10 to 12 minutes to turn from nut to crushed form, as we don't need powdery nut.
Further, take a mixing bowl. Add oats, soaked chia seeds, melted butter and about 2 tablespoons of honey. Bind it all together. Grease the palm and roll them into balls (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie/baking sheets. (Alternately, use a tablespoon/small cookie scoop to make your cookies).
Now, bake in preheated oven for 12-14 minutes. Take them out when they start to turn brown. Finally, let's transfer it to a cooling tray. Enjoy your energy cookies!
Note- Oat & nut cookies are freezer friendly.
Storage- Transfer it to an airtight container. Store in a dry place.
