Upma is an Indian savory breakfast that can be prepared from semolina, oats, pasta or vermicelli with vegetables, herbs, and spices. It is a super quick one pot recipe that can be prepared in less than 25 minutes.
Pasta upma is nutritious with the addition of veggies of your choice and is also great for kid’s lunch boxes. A delicious snacks option for all your hunger pangs. It is my favorite meal, and it is not just limited to breakfast or brunch.
Here I used dry curry leaves because it's hard to buy in-stores in Poland. As only Indian grocery stores have it. And I don't have time to shop every week. So, I buy it and dry it for the next use. So, if you live outside of India, this idea will help you keep curry leaves in your pantry.
Typically, this recipe consists of vermicelli that are either roasted or unroasted Indian sewaiya (Semiya). But here I used pasta instead of vermicelli. And believe me - it comes out the same and delicious!!
Finally garnish with the parsley or cilantro that tastes good to you.

Ingredients:
Pasta (Filini)- 2.5 cup
Oil- 3 tbsp
Mustard seeds- ½ tsp
Green chili- 2, chopped, optional
Curry leaves handful
Onion- 1 medium, chopped
Peas- 1/3 cup, frozen or fresh
Tomato- ¼ cup, chopped
Turmeric powder- 1/3 tsp
Red chili powder- ½ tsp
Black pepper powder- 1/4 tsp
Salt to taste
Chopped parsley for garnishing
Method-
Boiling of pasta
Heat a pan with enough water. Bring to a boil. Add pasta, let it boil for 5-8 minutes. Strain it and then rinse it with cold water to prevent the pasta from overcooking. Set it aside or you can add a little drop of oil to it and mix.
Preparation of upma
Heat a wok or pan. Add oil and once it is hot, put in mustard seeds, curry leaves and chilies. Stir quickly. Add onion and sauté for a minute. Add peas - fresh or frozen, doesn't matter. Then add chopped tomatoes. Sauté once again and then add the powdered spices (turmeric, red chili, and black pepper). Sprinkle with salt and mix well. Now, add prepared pasta and again mix all together for 1-2 minutes. Garnish with chopped parsley or cilantro leaves (whatever you like the most). Serve hot.
Note- Don’t overcook the pasta otherwise pasta will become sticky. So, while boiling, check it in middle. Great idea for lunch box or children’s tiffin box. Instead of red chili powder you can also use paprika powder.
Storage- store in a pot or any container with a lid and keep for up to 2 days.
