POTATO CARROT SOUP

Everyone wants to ask or think exactly what to make after a hectic day's work? Us either! So, here I bring the solution, I guess everyone loves potatoes. If not- ;) - add a bookmark!

Thus, today's recipe is Potato Carrot Soup. My family favorite soup. This easy soup is always so cozy, comfy and truly the best recipe ever.

It's perfectly rich & creamy, full of flavor. This soup really enhances the flavor when served with croutons or a slice of bruschetta, while the leafy flavor of coarsely chopped parsley ensures super freshness especially in cold nights. Let's make a cozy bowl of soup!

Yield – 2 servings

Timing – 20 minutes

Prep time – 10 minutes

Total- 30 min


Ingredients:

Potato- 2 pc., diced

Carrot- 1-2 pc., diced

Onion- 1 pc., small, chopped

Ginger- 1 tsp, chopped

Olive oil- 4 tbsp

Thyme- 1 tsp

Salt & pepper to taste

Water as required for soup

Cream- 50gm

Parsley- 2-3 strings, chopped


Method-

Peel and chop potatoes, onions, carrot, and ginger. Set it aside.

In a heated pan, add olive oil. Add the chopped onions and garlic, saute it for a minute. Then, add chopped potatoes and carrots, mix well. Add thyme and salt to taste and cook gently for about 15 minutes. If needed cover the pan with a lid.


Further, use a hand blender to blend it into a smooth paste, or directly pour the liquid into the blender jar after it has cooled down at room temperature.


Then, again heat up. Add cream and water as required for desire consistency, mix well. Add pepper as per your taste and chopped parsley. Mix gently. Served hot with croutons. Enjoy!


For making croutons-

Simply dice up some slices of your choice of bread and toss in olive oil over low heat until crispy and brown. Then, serve it on top of the soup.


Note- Don't use boiled potatoes as they give the soup a slimy texture.

Storage- It can be stored in a refrigerator in an airtight container for up to 3 days.
