Puff Pastry or Puff Pattice is the name of crunchy, flaky, and crispy snacks, which is super flavorful on the inside.This recipe is super quickly to make perfect for an evening snack or a quick breakfast.
I have prepared Puff Pattice / Pastry many times but with a ready layered sheet of patties. As homemade sandwich sheets are time consuming. In this video, I will cover both methods of making crispy, fluffy puff pastry with a filling inside your chosen filling.

Ingredients:
Puff Pastry dough- 1 pc, (ready-made or home-made)
Sliced cheese- 1 pcs., optional
1st Stuffing ingredients:
Oil- 2 tbsp
Onion- 1 no. small, finely chopped
Cumin seed- ½ tsp
Ginger- ½ tsp, grated
Green Peas- 2 tbsp, frozen or fresh
Coriander leaves- 1 tsp, dry or fresh
Potatoes- 2 nos., boiled & mashed
Turmeric powder- 1/3 tsp
Red chili powder- 1/3 tsp
Black Pepper powder- ¼ tsp
Salt to taste
Milk for washing
2nd Stuffing ingredients:
Oil- 1 tbsp
Spinach- 100 gm, cooked
Turmeric powder- ¼ tsp
Red chili powder- ¼ tsp
Black pepper powder- ¼ tsp
Salt to taste
3rd Stuffing ingredients:
Potatoes- 1-2 nos, mashed
Green chili- 1 nos, chopped
Salt to taste
Egg for washing
Method-
Preparation of 1st stuffing
In a preheated wok, add the oil, cumin seeds and chopped onions. Stir it well. Then, add chopped ginger, sauté until the onion turns transparent.
Further, add frozen or fresh green peas, sauté them quickly. Add mashed potatoes, mix well for 2 minutes. Additionally, add turmeric powder, red chili powder and black pepper powder, sauté it for 2 minutes. Finally, add dry or fresh cilantro leaves to enhance the flavor. Now, keep the stuffing aside.
Preparation of 2nd stuffing
In a preheated pan, add cooked spinach. Add oil and powdered spices. Mix it well. Set aside for a further process.
Preparation of 3rd stuffing
Take another bowl, add mashed potatoes, green chilli, and salt as per your taste. Mix well, set aside.
Further, take out the home-made pattice sheet and roll it into a thin and uniform rectangular size. Cut the uneven sides and cut them into a rectangular shape. Place the prepared stuffing in the middle and fold it in half, press it down and seal the sides with a fork.
Now, place the ready-made/finished dough. Roll over the twisted edges. Cut it into the desired length and width. Put the prepared stuffing in the middle and fold it in half again, press it down and seal the sides with a fork.
Placed it on baking tray. Brush the puffs with milk or egg wash or olive oil for a shiny texture.
Now, bake the puffs in a preheated oven to 150 C (300 F) for 20 minutes. Finally, the puff pattice is ready to be served with ketchup/ tea.
Note- If you want this recipe to be vegan or vegetarian, replace the egg washing liquid with plant-based milk such as oat milk, almond milk, soy milk, etc. Or use olive oil. And if you want to make non-veg fill them with the stuffing of your choice and use the eggs on the outside of the puff.
Storage- Better to have it immediately, as when it gets cold, it doesn't taste particularly good.
