Puff pattice dough or sheet is a time taking activity and lots of patience. But it would bring satisfaction to your face with the end result. Many popular snacks are prepared from this layered sheet. These layered sheets are used to prepare delicious, crunchy, and crispy varieties of patties like- potato, vegetable, chicken, paneer, scrambled egg. Another name for this dough or sheets is Puff Pastry.

Ingredients:
For Dough
All-purpose flour – 250 gm
Butter – 3 tbsp, melted & unsalted
Salt to taste
Water for kneading, cold
For Butter dough
All-purpose flour – 4 tbsp
Butter – 100 gm, unsalted
Salt to taste
Lemon juice- 2 tbsp
Method-
Dough method-
In a mixing bowl, add flour, salt, and butter. Crumble well with the dough.
Now, use cold water for kneading the dough. Knead the dough soft & smooth. If required add more water to knead it well. Cover it with lid or damp cloth or plastic, rest it for at least 15 minutes in the refrigerator.
Butter dough method-
In a bowl, add a little unsalted butter mashed. Then add flour, lemon juice and salt as per your taste. Mix it well to combine the ingredients together. Set aside for 15 minutes in the refrigerator.
Assemble the puff patties sheet method-
After 15 minutes, take out the kneaded dough from the refrigerator. Slightly knead it. Dust the working surface with dry flour and roll it gently to half cm thickness and make it in square shape.
Further, place the prepared butter dough block in the center by making a block. Now, wrap it from all four sides.
Cover it with plastic and rest the dough for 15 minutes in refrigerator. After 15 minutes, dust the surface with dry flour, press and flatten with the help of rolling pin. Roll it gently.
Then, fold it into 4 folds, wrap and rest it for 15 minutes in refrigerator and repeat this same action for next 6 times.
Finally, the puff pattice sheet is ready to be prepared for several varieties of puff pattice.
Note- Dough should not be hard. Every 15 minutes, repeat the process otherwise it will miss the layer formed. You can make 4 puff pastry from these ingredients.
Storage- It can be stored in a refrigerator for 2-3 weeks.
