Sabudana Vada- the crumble bumble

Sabudana Vada is consider as a snack which is deep fry and traditionally made in Maharashtrian style, in India. It is often served with spicy chutney or dips along with hot chai. People in Indian use to have it especially in fasting/ vrat. Sabudana Vada are crunchy and quickly melts in the mouth.

I love the crunchiest part of tapioca pearl. Basically, it's method is simple to prepare but a time-consuming recipe. To be honest it's so delicious and nutty flavored.

It fudges together when it is soaked properly at least 1/2 an hrs., or safer side 1 hrs. Then, you need to drain it, and keep it aside in the open-air room. The tricky part is, all the pearls need to be separated, so it's required 30 minutes minimum before making the vadas.

Sabudana Vada is sumptuous and light. During monsoon season, it's popular to eat such recipes like pakoras, vadas with adrak wali chai, which is the "(ginger tea)".

Ingredients:

Sabudana or Tapioca Pearl – 1.5 cups

Potatoes – 4-5 medium sized, boiled

Green chilli – 4 nos. chopped

Curry leaves – 1 tbsp

Coriander leaves – 2 tbsp, chopped

Ground nut – 1 cup, roasted & crushed

Cumin powder – 1 tsp. roasted

Red chilli powder – 1 tsp

Chat masala – 1 tsp

Salt to taste

Oil for frying


Method:

Step 1- Soak Tapioca Pearl in equal amount of water for minimum ½ an hour, then drain it and keep aside.

Step 2- In a big mixing bowl mix smashed potato and add in soaked Tapioca Pearl, then add coarsely crushed ground nut, green chilli, cumin powder, red chilli powder, chat masala, chopped coriander leaves and hand full of curry leaves. Followed by some salt to taste. And mix it all together.

Step 3- Apply a little oil on your palm, then take a big spoonful mixture & flatten it on your palm. Make a round flat surface. Heat the frying pan and pour some oil & shallow fry in hot oil on medium high flame until crisp & golden brown. Let the Vada fry for at least 5-6 minutes before turning them. Serve it hot & crispy with ketchup, chutney, sauce, or any dip of your choice!


*NOTE – For making Tapioca Pearl not so sticky, keep it extra 20-30 min aside after drain.
