You're gonna love this veg soup. Veg Manchow Soup is a spicy and hot mixed vegetable soup. It is another most loved soup recipe from Indo-Chinese cuisine.
This hot & spicy veg soup is perfect as an appetizer or as a main course, such as Hakka noodles or fried rice during frosty winter days. This super flavored soup is served with a topping with crispy fried noodles. Fried noodles make you want to eat more! It has a thick consistency.
However, you can easily adjust the consistency of the soup to your preference by increasing or decreasing the amount of cornstarch. Stir fried vegetables are immersed in a pot of broth enriched with aromatics and seasonings to create an aromatic bowl full of nutrients.

Fried noodles Ingredients:
Noodles- 1 cup
Corn starch- 2 tbsp
Oil for deep fry
Sprinkle some salt
Manchow soup Ingredients:
Olive oil- 2 tbsp
Ginger- ½ tbsp, chopped
Garlic- ½ tbsp, chopped
Green chili- 1-2 pcs, chopped
Onion- 1 small, chopped
Red bell pepper- 1 tbsp, chopped
Cabbage- 1 tbsp, chopped
French beans- 1 tbsp, chopped
Carrot- 1 tbsp, chopped
Water- 1.2 l
Vegetarian Bouillon (broth)- 1
Soy sauce- 1 tbsp
Tomato ketchup- 1 tbsp
Salt to taste
Black pepper powder- ½ tsp
Coriander stem- 1 tsp chopped
Slurry (cornstarch 1.5 tbsp+ water 4 tbsp)
Chive- 1 tbsp
Vinegar- 1 tsp
Method-
For Fried noodles
Heat a saucepan with enough water. Add noodles, bring it to boil. When cooked well, turn off the flame. Strain it and wash with cold water to prevent overcooking. Keep aside for a while.
In a mixing bowl, add the boiled noodles, sprinkle cornstarch, mix & coat the noodles well.
Heat the frying oil, carefully and gradually add the coated noodles. Deep-fry them on high flame until crispy and golden brown. Sprinkle some salt.
Take out the fried noodles on kitchen towel and crush it, or it can be stored in an airtight container and keep it in a dry place.
Preparation of Manchow soup
Heat a wok over high flame. Add oil, ginger, garlic, green chili, and onion, sauté for a few minutes. Add the rest of the veggies and sauté. Further add water, bring it to boil.
Now, add soy sauce and ketchup and mix well. Add bullion (broth), mix well.
In a separate bowl, add cornstarch and water to make cornstarch slurry. Then, add this slurry to the soup and cook until it becomes thick, you can adjust the quantity of slurry depending on how thick you want the soup to be.
Add pepper powder and salt to taste. Finish by adding freshly chopped coriander leaves with stems and chives. Now, Veg Manchow Soup is ready to be served. Also serve with crispy fried noodles for addition.
Note- Don’t overcook the veggies, just stir fry over high heat. You can use vegetable stock instead of broth (Bouillon).
